Almond Tofu with Pears & Ginger

Method

  1. Heat the almond milk with the agar-agar and honey, without bringing it to a hard boil.
  2. Pour into small dishes and let set in the fridge for at least 2h.
  3. Stew the diced pear with the ginger into a compote.
  4. Unmould the almond tofu and serve with the warm compote.

TCM perspective: Almond and pear moisten and nourish the Lung; ginger tempers the overall cool nature of the dish.

Tips & precautions: This dessert is served cold: best kept for those without marked internal Cold, or take it out of the fridge about 30 min before eating. The warm pear-ginger compote is precisely what rebalances the coolness of the almond tofu — don't leave it out.
